The association between alcohol drinking and subjective salty taste preference based on Korean Community Health Survey data

Objectives: Alcohol drinking and excessive sodium intake constitute risk factors for several diseases. The purpose of this study was to analyze the relationship be-tween the frequency and amount of alcohol drinking and subjective salty taste preference and salt-related eating behavior. Materials and methods: The data from the Korean Community Health Survey (2010 - 2013, 2014 - 2017) of more than 16 million Koreans were used to examine the frequency of alcohol drinking and the cumulative odds ratio (COR) for subjective salty taste preference and self-reported salt-related eating behavior when adjusted for sex, age, body mass index, educational level, household income, marital status, and smoking status. Results: Subjective salty taste preference and salt-related eating behavior increased with drinking frequency, with an adjusted odds ratio (AOR) of 1.18 (1.16 - 1.20) for subjective salty taste preference even when drinking less than once a month and drinking 1 - 2 cups at a time. The salty taste preference AOR was as high as 2.25 (2.17 - 2.32) in heavy drinkers with more than 10 cups at a time, four or more times a week. Drinkers liked to dip in soy sauce when eating fried food, and even those who drank less than once a month and consumed 1 - 2 cups at a time had an AOR of 1.28 (1.26 - 1.30) for dipping into soy sauce. The AOR for heavy drinkers with more than 10 cups at a time, four or more times a week was 2.07 (2.00 - 2.14). Conclusion: In Korea, both the frequency and amount of alcohol drinking were found to be associated with subjective salty taste preference. The findings suggest that even people who occasionally drink alcohol in small amounts prefer salt taste and are more likely to consume an excessive amount of salt than people who do not drink alcohol at all. We also found that the salt -related eating behavior of dipping into soy sauce when eating fried food may be a characteristic eating behavior of drinkers.
